North African Lima Beans with Apple and Cinnamon « Back

1 Tb olive oil
1 large onion, chopped
1 large tart apple, diced
1/4 tsp turmeric
1/2 tsp ground allspice
1/4 tsp ground cinnamon
4 cups cooked lima beans

In a large microwave safe bowl, place onions and oil and
microwave on high until onions are soft, about 5 minutes. Add
apple and seasonings; microwave on high 3 minutes until apples
are softened, but not mushy. Stir in beans and microwave a couple
of minutes to heat beans through.
