4 cooking apples, such as Granny Smith or McIntosh (about 1 1/2 pounds), unpeeled and thinly sliced
2 tablespoons fresh lemon juice
1 teaspoon ground cinnamon
1/2 cup raisins
1/4 cup maple syrup
Fat-free vanilla frozen yogurt, optional
Topping:
1 cup regular rolled oats, uncooked
1/3 cup flour
1/2 cup sliced almonds
2 tablespoons canola oil
2 tablespoons maple syrup
1 teaspoon pure almond or vanilla extract
Preheat oven to 350F. In a bowl, combine apple slices, lemon juice, cinnamon, raisins and syrup. In another bowl, combine topping ingredients. Spray a 9-by-13-inch baking dish with canola or olive oil cooking spray. Add apples, cover with foil and bake till apples are softened, about 30-40 minutes. Sprinkle with topping. Bake uncovered another 20-30 minutes until crisp. Serve warm with fat-free vanilla frozen yogurt if desired.
Serves 8.
Per serving: 236 calories, 7.5g total fat (0.7g saturated), 41g carbohydrate, 3.8g protein, 3.6g fiber, 4mg sodium.
