Healthy Recipes
1 1/2 pounds tomatoes, diced
1 15-ounce can black beans, drained and rinsed
1 cup cooked yellow corn kernels
1 medium jalapeño pepper, seeded and finely minced
1/2 cup chopped red onion
2 cloves garlic, chopped or crushed
1 cup minced fresh cilantro
1 tablespoon extra virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon honey
Hot sauce, cayenne pepper and salt, to taste
Combine all. Refrigerate 2 hours to let the flavors combine. Serve with baked tortilla chips or low-fat crackers.
Makes about 4 cups.
Per 1/2 cup: 94 calories, 2.5g total fat, (0.3g saturated), 16g carbohydrate, 3.6g protein, 3.8g fiber, 99mg sodium.
